Egg shortages around the country have egg lovers desperately finding alternatives right now. If you are lucky enough to have eggs in your local stores, you’re probably paying a pretty penny for them. Here are some great alternatives to eggs to get you through this egg-less time.
Tofu
Firm tofu can actually look and taste pretty similar to scrambled eggs, especially when you dress them up with cheeses, spring onions and LOTS of your normal spices. Tofu will typically cost around $2-$3 for a 12-14oz package. Find tofu at your grocery store or Amazon.

Aquafaba
This is the liquid from cans of chickpeas. Whip it really well to create a fluffy texture, then add your normal seasonings for a decent and healthy mimic of scrambled eggs.

Flax/Chia Seed
Ground flaxseeds or chia seeds are a nice substitute. Use the ratio of 1 tablespoon ground seeds to 2.5 tablespoons water to replace 1 egg.

Liquid Eggs
Liquid eggs are real eggs that have been cracked and pasteurized. These can be found in your store’s refrigerated section. You’ll find just egg whites or full egg substitutes. These are very convenient, although because they are real eggs, we may start seeing a shortage on these, as well.

Powdered Eggs – Sharky’s favorite!
Powdered eggs are real eggs that have been dehydrated into a powder. These are Sharky’s favorite because they have a very long shelf life, are real eggs, and are delicious. There are tons of varieties, so you’ll want to research to find the best for you. Again, watch for price increases on these items. Sharky recommends stocking up now. See some options on Amazon.

Baking Egg Substitutes
When baking, the purpose of eggs is to help bind the ingredients, and also add structure, moisture & nutrients to the baked product. If you’re baking, you can use these ratios to replace ONE egg:
- Applesauce: 1/4 cup
- Silken tofu: 1/4 cup
- Aquafaba: 2.5 tablespoons – great for egg whites replacement
- Egg replacers: typically 1 teaspoon + 2 tablespoons water
- Flaxseed: 1 tablespoon + 3 tablespoons water
- Banana: 1/4 cup mashed
- Avocado: roughly 1 medium (1/4 cup)
- Greek yogurt: 1/4 cup
- Pumpkin puree: 1/4 cup
- Buttermilk: 1/4 cup
- Nut Butter: 3 tablespoons
- Carbonated water: 1/4 cup
- Unflavored gelatin: dissolve 1 tablespoon in 1 tablespoon cold water. Mix in 2 tablespoons boiling water until frothy.
- Soy lecithin: 1 tablespoon – great for egg yolk replacement
PRO TIP: when you find eggs or find a great deal on them, FREEZE them! Crack them into muffin tins or freezer-proof baggies, and store in the freezer for up to a year!
